Ingredients in Healthy Protein Tortillas
These healthy tortillas are packed with protein thanks to the greek yogurt and collagen powder. But you can easily swap those out for vegan and vegetarian options.
And you can use gluten-free flout to make this recipe as well. I have supplied tips to do so in the recipe card below.

How to Make Healthy Protein Tortillas
Because the base of these tortillas are made with yogurt, you’ll want to store them in the fridge or freezer.
You can easily reheat in the microwave, or in a dry hot pan (just as you cooked them). I like to cover the pan to keep the heat in, this helps the tortillas heat up faster and therefore they are not likely to brown much more.


How to Make Protein Tortillas:
- Heat a dry pan over medium-high heat.
- Combine all of the ingredients in a large bowl.
- Mix until you have a ball of dough.
- Flour a clean surface, and place the dough on the prepared surface.
- Form the ball into 2 thick disks, then use a knife or pizza cutter to cut each ball of dough into 8 slices (you will have 16 total).
- Roll each slice into a ball and add one at a time to a clean floured surface.
- Use a rolling pin to roll each ball of dough out until you have a thin round tortilla.
- Add the tortilla to the hot pan and cook for 40-60 seconds each side (I do this as I roll out the next tortilla).
- When the tortilla is slightly browned, it’s done. Remove from the hot pan to a plate and move onto the next tortilla.
- Serve warm, or store in the fridge for up to a week, freezer for up to a month.

I love to make these for taco nights, the small size of tortillas makes 16 total. But if you want a larger tortilla that works too. For medium tortillas just split the dough into 8 portions and roll out large.
