This low calorie recipe for breakfast quesadillas can easily be meal prepped.

How to Meal Prep Breakfast Quesadillas:

  1. Chop the veggies and the meat (or vegan crumbles) and add to freezer bags. Each bag should have 1-2 servings.
  2. Lay flat in the freezer (I like to layer the bags on a cookie sheet) and freeze until frozen.
  3. Store in the freezer for up to 3 months.
  4. When it’s time to cook, add the frozen veggies and meat to the pan at the same time to both cook and defrost.
  5. Then carry on with the eggs, tortillas and cheese.

How to Make Simple Breakfast Quesadillas:

  1. Spray a large skillet with olive oil and heat to medium-high.
  2. Add the bell pepper, jalapeño and garlic clove, cook for 5-10 minutes until the bell peppers soften.
  3. Remove the garlic clove and discard. And lower the heat to medium.
  4. Add the ham, and push all the veggies and meat to one side of the pan.
  5. In the empty side of the pan add the egg and push around until scrambled, remove from heat and mix well.
  6. To get started with the tortillas, put a little cheese on one tortilla, then layer the egg mixture then a little more cheese, and top with another small tortilla.
  7. Heat a clean pan on med-high place the quesadillas in the pan and cook until cheese is melted and tortilla is slightly browned, flip and repeat.
  8. Using a pair of scissors, a pizza wheel, or a knife slice the quesadillas, then plate with the optional toppings and serve.
