I like to use an all-natural zero calorie sweetener in place of sugar. But you can swap it out for brown sugar, coconut sugar, date sugar, or monk fruit.
You can make these Pumpkin Chocolate Chip Cookies by swapping out the frosting for 1/2 cup semi-sweet chocolate chips. Just mix them into the batter.

How to Make Healthy Pumpkin Cookies
If you don’t have parchment paper that’s ok. Just grease the baking sheet before adding the cookies.
To store the cookies, place in an airtight bag or container and keep in the fridge for up to a week and the freezer for up to a month.


How to Make Skinny Pumpkin Cookies:
- Preheat oven to 325 degrees and line a baking sheet with parchment paper.
- To a large bowl combine the flour, sugar, baking soda, salt, and pumpkin pie spice. Mix well.
- In a separate bowl combine the pumpkin puree, water. Whisk together.
- Pour the wet ingredients into the dry ingredients and mix together until just combined.
- Scoop out 16 cookie balls and place on the prepared baking sheet.
- Wet your hands a little and then press the cookies down a bit to form cookie rounds.
- Bake for 7 minutes, then remove from the oven and let cool completely on the baking sheet (they will continue to cook on the sheet while they cool.)
- Once completely cool, smear 1 tablespoon of frosting on each and a dash of pumpkin pie spice.
