These Low Calorie Pumpkin Cookies are just 41 calories each, and that includes the frosting!
I used a zero calorie (all-natural!) sweetener in place of sugar, though you can swap it out for brown sugar, coconut sugar, date sugar, or monk fruit.
Special Tip: To make these Pumpkin Chocolate Chip Cookies swap out the frosting for 1/2 cup semi-sweet chocolate chips and mix them into the batter.
