Ingredients You’ll Need:

  • ¼ cup coconut oil
  • ¼ cup all-natural zero calorie sweetener (honey, maple syrup, or sugar will work too)
  • ½ cup creamy peanut butter
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 cup quick oats (Gluten-free if needed)
  • ¼ teaspoon salt

Meal Prep: You can make the healthy recipe ahead of time and bake completely then cover and store for later. You can also store unbaked just cover well, and store for later.
Storage: Will hold for 6 days in the fridge baked, or 2 days unbaked. Or one month in the freezer (baked or unbaked).
Reheating: You can reheat (or if stored unbaked follow directions below to bake) in an oven at 200-250 degrees until warmed through.

  • Line two baking sheets with parchment paper.
  • To a medium saucepan combine coconut oil, peanut butter, zero calorie sweetener and cocoa. Heat over medium heat, and cook stirring often, until melted.
  • Remove from heat, and add in vanilla, oats, and salt, and mix together until well combined.
  • Scoop 18 cookies, dropping onto the prepared cookie sheets as you work.
  • Cool at room temperature until set, about 15 minutes, then move to the fridge for an additional 15 minutes.
