This Low Calorie No-Bake Cookies recipe is just 88 calories! It has no flour (so it’s low carb) and no aded sugar (so it’s low sugar!). Best of all, you don’t need to turn on the oven to make these healthy no bake cookies. Making them great for hot days, or for kitchen fun with kiddos.
Ingredients You’ll Need:
- ¼ cup coconut oil
- ¼ cup all-natural zero calorie sweetener (honey, maple syrup, or sugar will work too)
- ½ cup creamy peanut butter
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 cup quick oats (Gluten-free if needed)
- ¼ teaspoon salt

Equipment
- Parchment Paper (or wax paper)
Ingredients
- ¼ cup coconut oil
- ¼ cup all-natural zero calorie sweetener (honey, maple syrup, or sugar will work too)
- ½ cup creamy peanut butter
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 cup quick oats (Gluten-free if needed)
- ¼ teaspoon salt
Instructions
- Line two baking sheets with parchment paper.
- To a medium saucepan combine coconut oil, peanut butter, zero calorie sweetener and cocoa. Heat over medium heat, and cook stirring often, until melted.
- Remove from heat, and add in vanilla, oats, and salt, and mix together until well combined.
- Scoop 18 cookies, dropping onto the prepared cookie sheets as you work.
- Cool at room temperature until set, about 15 minutes, then move to the fridge for an additional 15 minutes.
