You can use your favorite protein powder to make these cookie bars chocolate chip recipe. I like to make them with a plant based vanilla protein powder, but you can choose your favorite.
If you want to make this chocolate chip protein bars recipe gluten-free make sure to pick gluten-free oatmeal. And it’s easy to make them vegan, all you need is vegan chocolate chips.

- Old fashioned oatmeal
- Almond, peanut, or cashew butter
- Vanilla protein powder
- Dark chocolate chocolate chips (or semi-sweet)
How to Make Low Calorie Chocolate Chip Bars
You don’t need to bake these easy cookie bars! Just assemble and chill until they are set and you can cut them.
You can also easily double or triple them and make extras for meal prep protein snacks! I’ve included a recipe card below where you can easily double or triple the recipe. And it does all the math for you on the ingredient amounts!


How to Make Healthy Chocolate Chip Cooke Bars:
- Line an 9×9 baking dish with parchment paper (if you crumple it first then smooth out, it’s easier) and set aside.
- In a food processor or high speed blender, add the oatmeal and blend until it’s the consistency of flour.
- To the oat flour, add nut butter, protein powder, and water and blend until smooth.
- Fold in the chocolate chips until well distributed.
- Transfer to the prepared baking dish and press down to evenly distribute.
- Refrigerate for 2-3 hours until firm.
- Remove the protein bars from the fridge, and cut into 10 bars.

To lower the carbs in these protein bars, choose a low carb or keto friendly protein powder. With the word “protein” in the name people rarely look at the carbs in the protein powders. But they can be full of carbs depending on what type of diet they support. Look for a protein powder with the words “keto” or “keto friendly” in the description.
Gluten Free Protein Cookie Bars
To make these low calorie bars gluten-free, choose gluten free oatmeal and protein powder.
Low Sodium Protein Cooke Bars
To lower the sodium in cookie bars, choose no salt or low sodium peanut or nut butter. Also check the protein powder and ensure you’re not adding in excess sodium. Instead look for a low sodium protein powder.
Vegan Protein Cookie Bars
You can easily make these low calorie protein bars vegan by swapping the chocolate chips with vegan chocolate chips. Also, be sure to use a plant based protein powder (my favorite is linked to in the recipe below).
