You only need a handful of ingredients (many you already have) and you'll only need 1 lemon as you use the zest and juice of just one.
Special Tip: I like to use a cast iron skillet to both brown and bake the chicken breasts as it makes less cleanup. But you can easily brown them in a pan and then move them to a baking dish.

  • Preheat the oven to 400 degrees.
  • Season the chicken breasts all over with salt, pepper and the Italian seasoning.
  • Heat the olive oil in a large skillet (an oven safe skillet is ideal) over medium high heat and spray with olive oil.
  • Add the chicken breasts cut side up, and cook for 3-5 minutes until browned. Flip and cook for an additional 3-5 minutes until browned.
  • Transfer the chicken to a baking dish, unless you are using an oven safe skillet, in that case skip this step.
  • In a small bowl, mix together the garlic, lemon zest and juice, and chicken broth. Pour the garlic mixture over the chicken.
  • Bake for 20-25 minutes or until chicken is cooked through.
  • To serve, add the chicken to a plate (or individual plates) and spoon over the sauce from the bottom of the pan.
