  1. Preheat the oven to 400 degrees.
  2. Season the chicken breasts all over with salt, pepper and the Italian seasoning.
  3. Heat the olive oil in a large skillet (an oven safe skillet is ideal) over medium high heat and spray with olive oil.
  4. Add the chicken breasts cut side up, and cook for 3-5 minutes until browned. Flip and cook for an additional 3-5 minutes until browned.
  5. Transfer the chicken to a baking dish, unless you are using an oven safe skillet, in that case skip this step.
  6. In a small bowl, mix together the garlic, lemon zest and juice, and chicken broth. Pour the garlic mixture over the chicken.
  7. Bake for 20-25 minutes or until chicken is cooked through.
  8. To serve, add the chicken to a plate (or individual plates) and spoon over the sauce from the bottom of the pan.
