I like to make a salad with any leftovers. It’s the perfect next day lunch, and is amazing cold! This is especially great with the smaller interior leaves of the butter lettuce.
I cut up the remaining lettuce, and toss leftover filling and the leaves together for a quick leftover salad.

- Heat a large skillet over medium-high heat, spray witty olive oil.
- Add the chicken to the skillet and cook 5 minutes, crumbling and mixing as it cooks.
- Add in the onion and cook for an additional 5 minutes.
- Meanwhile, add the sauce ingredients to a medium bowl and mix well.
- Pour the sauce over the chicken, and mix well to combine.
- Cook until the chicken is cooked through and the sauce is absorbed (about 5 minutes).
- Add in the cashews and mix well.
- Remove from the heat and top with green onions.
- Serve in butter lettuce leaves.
