How to Make Low Calorie Chicken Lettuce Wraps

I like to make a salad with any leftovers. It’s the perfect next day lunch, and is amazing cold! This is especially great with the smaller interior leaves of the butter lettuce.

I cut up the remaining lettuce, and toss leftover filling and the leaves together for a quick leftover salad.

How to Make Low Calorie Chicken Lettuce Wraps:

  1. Heat a large skillet over medium-high heat, spray witty olive oil.
  2. Add the chicken to the skillet and cook 5 minutes, crumbling and mixing as it cooks.
  3. Add in the onion and cook for an additional 5 minutes.
  4. Meanwhile, add the sauce ingredients to a medium bowl and mix well.
  5. Pour the sauce over the chicken, and mix well to combine.
  6. Cook until the chicken is cooked through and the sauce is absorbed (about 5 minutes).
  7. Add in the cashews and mix well.
  8. Remove from the heat and top with green onions.
  9. Serve in butter lettuce leaves.
