Healthy Chocolate Rice Cake Meal Prep and Storage

Meal Prep: You can easily meal prep these! Simply wrap individual portions in parchment paper, and stack in a gallon freezer bag or container.
Storage: Will hold in the fridge for 5 days and in the freezer for a month.

10 Optional Chocolate Rice Cake Toppings:

  • 1 pinch salt
  • 1 teaspoon chia seeds
  • ½ banana sliced
  • 2 strawberries sliced
  • 10 blueberries
  • 1 tablespoon flaked coconut
  • 1 tablespoon chopped peanuts
  • 1 tablespoon chopped almonds
  • 1 tablespoon Homemade Granola
  • 1 tablespoon All-Natural Rainbow Sprinkles

Instructions
 

  • Add the peanut butter and chocolate chips to a microwave safe bowl.
  • Microwave in 30 second increments, stirring in-between, until the chocolate is melted.
  • Spread the chocolate and peanut butter mixture over the rice cake.
  • Add any toppings, and serve.
