  • ½ cup coconut flour
  • 3 (69 grams) scoops vanilla protein powder
  • ½ cup creamy almond butter or peanut butter
  • ¾ cups unsweetened applesauce
  • 1 teaspoon baking soda
  • ⅓ cup semi sweet chocolate chips

Healthy Protein Cookies Meal Prep and Storage

Meal Prep: You can make the healthy recipe ahead of time and bake completely then cover and store for later. You can also store unbaked just cover well, and store for later.
Storage: Will hold for 6 days in the fridge baked, or 2 days unbaked. Or one month in the freezer (baked or unbaked).
Reheating: You can reheat (or if stored unbaked follow directions below to bake) in an oven at 200-250 degrees until warmed through.

Lose Weight By Eating
These protein powder cookies are just 71 calories each, and thanks to the naturally sweet apple sauce, they are low sugar and low carb too!
I used (plant based) Orgain Protein Powder to make these protein cookies, but you could use your favorite protein powder.
Special Tip: Each protein powder scoop is a little different in size, so look at the back for grams per scoop or use 1/2 cup and 1 teaspoon to get to the 69 gram measurement.

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • In a medium bowl combine the coconut flour, protein powder, almond butter, applesauce and baking soda.
  • Mix together until just combined, then fold in chocolate chips.
  • Scoop 1 oz (2 tablespoon) balls of cookies form the batter and place on the prepared baking sheet, flattening gently with the palm of your hand.
  • Bake for 10-13 minutes until lightly browned.

Special Tip: To stop the protein cookie batter from sticking to your hand (when you flatten the cookies) lightly wet your hands with cold water.
