I like to serve them with berries, and often I smear the leftovers with peanut butter for a healthy afternoon snack. No matter how you serve them, I know you’ll love these pancakes.

  • Large eggs
  • 0% Greek yogurt
  • Vanilla Protein Powder (see recipe card below for more information!)
  • Baking powder
  • Olive oil spray (see recipe card below)

How to Make Healthy Protein Pancakes

These protein pancakes can easily be made as a meal prep breakfast. I like to make several batches on weekend mornings. I serve some and pack the rest up as meal prep breakfast for the week.

Meal Prep Tips:

  1. Choose how many pancakes you want to make (the recipe card has 2X and 3X buttons to double or triple the amount of low calorie protein pancakes you plan on making.)
  2. Make the pancakes as instructed and cool completely. 
  3. Cut parchment paper out into pancake sized sheets, and place them in-between the pancakes, stacking the protein pancakes 2-4 per stack (depending on how many you will have per serving). 
  4. Place the stacks into a freezer bag and freeze. Will hold in the freezer for 3 months. 
  5. Discard the parchment paper and reheat the healthy protein pancakes in the microwave for 1 minute, in the toaster oven on toast for 3 minutes, or in a warm oven.

How to Make Skinny Protein Pancakes:

  1. In a medium bowl, add the eggs and yogurt. Whisk together.
  2. Add the protein powder and baking powder, and mix well until smooth. Then let the batter rest for 10 minutes while it thickens.
  3. Meanwhile, preheat the oven to the lowest setting (200 degrees or “warm”) and place a baking sheet in the oven.
  4. Heat a skillet or griddle over medium heat, and spray with olive oil.
  5. Use a 1/8 cup to scoop scoop pancakes onto the hot skillet or griddle.
  6. Cook the pancakes until they bubble on top, about 45-60 seconds. Flip and cook them for just a few more seconds on the second side.
  7. Transfer the cooked pancakes to the warm cookie sheet in the oven while you work on the rest of the batter.
  8. Serve warm with your favorite toppings.
