How to Make Low Calorie Baked Meatball Casserole
You can easily meal prep this healthy baked meatball casserole, simply bake the meatballs for 30 minutes then remove from the oven. Cover with cheese and add the foil back to the top and cool before moving to the fridge or the freezer. Then all you have to do is reheat and broil.
A special tip on re-heating these, just add them to the oven and start the preheating at the same time. They will slowly heat up as the oven heats up. Then you can uncover and broil.

How to Make Low Calorie Meatball Casserole:
- Preheat the oven to 375 degrees.
- Pour ¾ of the marinara sauce on the bottom of a 9×13 inch casserole dish.
- Add the turkey, egg, parmesan cheese, breadcrumbs, salt and pepper to a large bowl.
- Add in 1/4 cup marinara sauce (it’s ok if it’s cold).
- Mix with your hands until just combined, over-mixing will make tough meatballs.
- With wet hands (to avoid sticking) divide the meatballs into 12 portions, then roll each in your hands until you have a perfect ball. Place in the casserole dish and keep working until you have 12 meatballs.
- Add the meatballs. Spoon remaining sauce over the top.
- Cover with foil and bake for 30 minutes.
- Uncover and top with cheese, and bake 15 more minutes.
- Broil for additional 1-2 minutes until the cheese is melted.
- Serve hot.
Healthy Tips and Swaps
You can easily modify this low calorie meatball casserole to suit your own dietary needs.
Low Carb Baked Meatballs
Make these meatballs low carb by serving them over baby spinch (trust me, it’s amazing!) or over Baked Spaghetti Squash.
Gluten-Free Baked Meatballs
To make this meatball casserole gluten-free simply swap out the breadcrumbs with gluten free bread crumbs. You can even make your own gluten-free breadcrumbs. Simply toast your favorite gluten-free bread, cool completely, then add to a food processor and pulse until you have breadcrumbs.
Low Sodium Baked Meatballs
To make these low calorie baked meatballs low sodium, skip the salt from the recipe, and make your own marinara sauce (I supplied a recipe) and omit the salt from that recipe as well.
High Protein Baked Meatballs
These meatballs are already packed with protein. To keep the entire meal high in protein skip the pasta and serve alone or one baby spinach.
Low Sugar Baked Meatballs
To make these healthy baked meatballs low sugar, simply make your own marinara sauce (see recipe link below). Store-bought sauce is packed with sugar, but making you own is easy and low in sugar.
