I like to get a combination of apples to make this healthy apple slaw. I used a Granny Smith, red delicious, and honey crisp. They all have very different textures and flavors and work really well together.

But you can use your favorite apples, or make a tart apple salad and get all Granny Smith (green apples).

  • Celery
  • Baby spinach
  • Green onions
  • Fresh flat-leaf parsley
  • 0% Greek yogurt
  • Dijon mustard
  • Maple syrup or honey
  • Apple cider vinegar
  • Salt and pepper (see nutrition section for low sodden tips)

How to Make Low Calorie Apple Coleslaw

Thought this salad does need to be chilled for a couple of hours, it will get soggy after a day or two. Not so bad for leftovers, but also not ideal for serving. So try to make it same day.

How to Make Skinny Apple Coleslaw Salad:

  1. Core and slice the apples into thin sticks, adding to a bowl as you work.
  2. Add in the celery, spinach, green onions and the parsley.
  3. In a medium bowl combine the yogurt, maple syrup, apple cider vinegar, salt and pepper. Mix well.
  4. Add the dressing to the bowl of apples and veggies and toss well to combine.
  5. Cover and store in the refrigerator until ready to serve.
