  • 3 cups corn cooked and sliced off the cob (or frozen corn defrosted)
  • 1 English cucumber 
  • 2 large tomatoes 
  • 5 radishes 
  • 2 green onions 
  • ¼ cup fresh basil 
  • 1 lime juiced
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Meal Prep– This corn salad is the perfect meal prep side dish, or potluck dish! You need to make it ahead and chill it anyhow, so make it 1-2 days before.

  • 3 cups corn cooked and sliced off the cob, or frozen corn defrosted
  • 1 English cucumber quartered and sliced
  • 2 large tomatoes chopped
  • 5 radishes quartered
  • 2 green onions sliced
  • ¼ cup fresh basil chopped
  • 1 lime juiced
  • ¼ teaspoon salt
  • ¼ teaspoon pepper


  • To a large bowl combine the corn, cucumber, tomatoes, radishes, and green onions. Toss well.
  • Top with green onions, basil, lime juice, salt and pepper, toss again.
  • Cover and chill in the fridge, or serve immediately.
