I made this recipe after recipe requests for summer veggie salads, and this has a lot of them. Corn, cucumbers, tomatoes, basil and radishes.

Depending on the herbs you have in your garden, you can modify this recipe. You can swap out the basil for cilantro or parsley. You can also swap the lime juice out for lemon juice and modify the sodium as well.

I wanted to make an easy sweet corn salsa that you can modify to work with the fresh veggies you have in your garden right now.

And for those of us with a black thumb (like me) all of these veggies are on sale during the summer, making it low cost either way.

Shopping List for Healthy Sweet Corn Salad:

  • Corn (cooked and sliced off the cob, or frozen corn defrosted)
  • English cucumber
  • Tomatoes
  • Radishes
  • Green onions
  • Fresh basil (see recipe card below for more herb ideas!)
  • Lime
  • Salt and pepper (see nutrition section for low sodium tips)

How to Make Healthy Corn Salad

This salad is great at room temperature, or cold. I like to make it for gatherings or sides for the week, and add it to the fridge. All I have to do to serve is uncover, give the salad another quick toss, and serve.

And if 1/2 cup is not a big enough serving for you, feel free to have a full cup. The recipe will still be low calorie and super healthy!

How to Make Healthy Sweet Corn Salad:

  1. To a large bowl combine the corn, cucumber, tomatoes, radishes, and green onions. Toss well.
  2. Top with green onions, basil, lime juice, salt and pepper, toss again.
  3. Cover and chill in the fridge, or serve immediately.
