I like to use black beans and white beans to make this healthy cowboy dip, but you can use any beans you like. It’s great with pinto, black eyed peas, and even kidney beans!

Cowboy Caviar Ingredients:

  • (15 oz.) can black beans
  • (15 oz.) can northern white beans
  • Roma tomatoes
  • Jalapeño
  • Corn (fresh or frozen)
  • Bell peppers (choose your favorite color)
  • Red onion 
  • Cilantro
  • Low Calorie Chips (optional- for serving)

Dressing Ingredients:

  • Limes juiced
  • Chili powder
  • Cumin
  • Apple cider vinegar
  • All-Natural Zero Calorie Sugar (see recipe card!) or granulated sugar
  • Salt and pepper

How to Make Low Calorie Cowboy Caviar

This low calorie cowboy dip is easy and yummy, I know you’ll love it! It’s best served chilled, but if you can’t wait (I never can!) Then you can eat it right away at room temperature.

How to Make Low Calorie Cowboy Caviar:

  1. To a large bowl combine the beans, tomatoes, jalapeño, corn, bell peppers, red onion, and cilantro.
  2. In a separate medium bowl combine the dressing ingredients and whisk well to combine.
  3. Pour the dressing over the cowboy caviar and mix well so that everything is coated in dressing.
  4. Serve with chips at room temperature, or cold.

This Low Calorie Cowboy Caviar is quick and easy to make, as I noted above, you can swap out the beans for your favorites. You also get to choose the color of bell peppers you use (I chose red as it has the most mild flavor).

  • 1 (15 oz.) can black beans drained and rinsed
  • 1 (15 oz.) can northern white beans drained and rinsed
  • 2 roma tomatoes diced
  • 1 jalapeño seeded and finely diced
  • 2 cups corn fresh or frozen
  • 2 bell peppers seeded and finely diced
  • ½ red onion diced
  • ¼ bunch cilantro leaves chopped
  • Low Calorie Chips (optional- for serving)

  • 2 limes juiced
  • ½ teaspoon chili powder
  • 1 teaspoon cumin
  • ½ tablespoon apple cider vinegar
