Storage: Will hold for 5 days in the fridge or 1 month in the freezer.
Reheating: Reheat in the microwave for 1-2 minutes.

Low Calorie Corn on the Cob
IngredientsĀ Ā
- 4 ears of corn hulled and cleaned
- 4 teaspoons butter
- Salt and Pepper
Healthy Butter and Salt Replacements:
- Lime and Cilantro ā I like to use lime juice and cilantro for a super low calorie and sodium ear of corn
- Lemon and Parmesan ā Try lemon juice, chopped parsley, and a small sprinkling of parmesan for a salty kick
InstructionsĀ
Grilled Corn on the Cob:
- Preheat grillĀ on high and heat for 10 minutes.
- Add shucked corn and cook, turning often, until charred all over, about 10 minutes.
Microwaved Corn on the Cob:
- Wrap the each ear of corn in a moist paper towel, and place on a microwave safe plate.
- Cook in the microwave for 5 minutes. Carefully remove paper towel.
Boiled Corn on the Cob:
- Bring 1 gallon of water to a boil over medium heat.
- Add the shucked corn on the cob.
- Cover and return to a boil for 5-7 minutes.
- Remove the corn on the cob from the hot water with thongs.
Instant Pot Corn on the Cob:
- Add 1 cup of cold water and trivet in the Instant Pot.
- Add ears of corn to the Instant Pot.
- Close the lid and cook on high pressure for 1 ā 2 minutes.
- Quick Release and serve.
Oven Roasted Corn on the Cob:
- Preheat oven to 425 degrees.
- Top each hulled cob of corn with butter and salt, or desired seasoning and wrap individually in aluminum foil.
- Place foil-wrapped corn cobs on a baking sheet.
- Bake until soft, 20-25 minutes, turning once halfway through cook time.
- Remove corn from foil.
