  • Ears of corn 
  • Seasoning Salt (see nutrition section below for low sodium tips)
  • Olive Oil Spray
  • Fry sauce (optional- for dipping)

How to Make Healthy Corn Ribs

You can make these corn ribs in the air fryer or the oven. I have supplied directions for both methods below in the recipe card.

If slicing the corn down the middle is daunting, you can cut the ears of corn in half so that you are working with shorter ears of corn.

How to Make Healthy Corn Ribs:

  1. Stand one ear of corn vertically with the wider part against the cutting board.
  2. Slice down the middle in half then cut the halved parts into quarters. Repeat with the second ear of corn.
  3. Spray the corn with olive oil and sprinkle over the seasoning.
  4. Cook in the oven or the air fryer (see directions below in recipe card!)
  5. Serve hot with your favorite dipping sauces.

  • Stand one ear of corn vertically with the wider part against the cutting board.

Oven-Baked:

  • Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
  • Add the seasoned corn ribs to the prepared baking sheet.
  • Bake for 25-35 minutes depending on how crunchy you want the corn ribs.

Air Fryer:

  • Lay the corn ribs in a single layer in your air fryer basket.
  • Air Fry at 375 degrees for 7 minutes.
  • Flip and cook for an additional 7 minutes.

Nutrition and Calories in Corn Ribs

Low Sodium Tips: Make your own seasoning salt (link to recipe above) but omit the salt all together. When it’s time to make the corn ribs add 1-2 teaspoons lemon zest to the seasoning. Alternatively, you can omit the salt, and squeeze lemon juice over the corn ribs after cooking, just before serving.
