Meal Prep: This is a great meal prep side dish, make a big batch and add to your meal prep containers with your favorite proteins and sides.
Storage: Will hold for 5 days in the fridge or 1 month in the freezer.
Reheating: Reheat in the microwave for 1-2 minutes.

Low Calorie Corn Ribs
Ingredients
- 2 ears of corn shucked and cleaned
- 1 tablespoon Seasoning Salt
- Olive Oil Spray
- Fry sauce optional- for dipping
Instructions
- Stand one ear of corn vertically with the wider part against the cutting board.
- Slice down the middle in half then cut the halved parts into quarters. Repeat with the second ear of corn.
- Spray the corn with olive oil and sprinkle over the seasoning.
- Cook in the oven or the air fryer (see directions below).
- Serve hot with your favorite dipping sauces.
Oven-Baked:
- Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
- Add the seasoned corn ribs to the prepared baking sheet.
- Bake for 25-35 minutes depending on how crunchy you want the corn ribs.
Air Fryer:
- Lay the corn ribs in a single layer in your air fryer basket.
- Air Fry at 375 degrees for 7 minutes.
- Flip and cook for an additional 7 minutes.
