You can whip this healthy grilled salad in just 10 minutes, and it comes with a fat burning dressing, that’s also Rachael Ray approved!   • Olive Oil Spray
  • Salt and pepper
  • Low Calorie Blue Cheese Dressing
  • Bacon or turkey bacon
  • Roma tomato
  • Shredded parmesan cheese

Healthy Grilled Romaine Salad Meal Prep and Storage

Meal Prep: To meal prep a salad, add all the ingredients to individual meal prep containers, or family sized containers. Add the dressing to a separate container and do not add it until you are ready to serve.
Storage: Will hold in the fridge for 4-5 days, does not hold well in the freezer.
Serving: If you added the dressing and the salad gets soggy, add it to a sandwich wrap or large tortilla. It’s a great way to salvage leftover soggy salad.

This Low Calorie Grilled Romaine Salad is just 83 calories (including all of the toppings) and it makes a wonderful side salad or dish.
You can also make this inside on the stovetop, just use a grill pan on the stovetop and follow the directions as outlined below.
Special Tip: I recommend you use the blue cheese dressing provided. It is packed with metabolism boosting ingredients, and famous! I made it with Rachael Ray and I have supplied you with a video of us making the dressing below!

Ingredients
 
 

  • 2 hearts of romaine lettuce
  • Olive Oil Spray
  • ¼ teaspoon salt
  • teaspoon pepper
  • cup Low Calorie Blue Cheese Dip
  • 2 tablespoons water
  • 2 slices bacon or turkey bacon cooked and crumbled
  • 1 roma tomato diced
  • 1 tablespoon shredded parmesan cheese

Instructions
 

  • Preheat the grill to medium-high heat.
  • Meanwhile, cut the romaine hearts in half lengthwise and trim the stem end just a little, so that the lettuce still holds together.
  • Spray the romaine lightly all over with olive oil and sprinkle with salt and pepper.
  • Place the romaine slices cut side down on the preheated grill and cook undisturbed for 3 minutes.
  • Flip and cook for an additional 3-5 minutes until tender on the inside and crispy on the outside.
  • Meanwhile, add the blue cheese dip and water to a bowl. Mix together to make the dressing thin enough to drizzle, adding more water 1/2 tablespoon at a time until you have reached your desired consistency.
  • Remove from the grill, drizzle over the blue cheese dressing. Sprinkle the crumbled bacon, tomatoes and parmesan over the tops and serve hot.
