Everything You’ll Need
- 10 ounces linguine (or your favorite pasta)
- 1 ½ pounds extra large shrimp
- 1 tablespoon unsalted butter
- 4 garlic cloves minced
- ½ cup dry white wine (or chicken broth)
- Salt and pepper
- 1 teaspoon red pepper flakes
- 2 tablespoons fresh lemon juice
- ¼ cup fresh parsley

Meal Prep – Cook the pasta and shrimp according to the directions, and then allow to cool completely. Scoop single servings into individual containers, or family sized servings into a large container.
Frozen Leftovers – Will hold in the freezer for 1 month.
Refrigerated Leftovers – Will hold in the refrigerator for 4 days.
Reheating – Add defrosted single servings to a microwave and heat for 2-3 minutes until warmed through. Or add to a skillet over medium-low and cook mixing often until warmed through (about 8 minutes).

Low Calorie Shrimp Scampi Pasta
Ingredients
- 10 ounces linguine or your favorite pasta
- 1 ½ pounds extra large shrimp peeled and deveined
- 1 tablespoon unsalted butter
- 4 garlic cloves minced
- ½ cup dry white wine or chicken broth
- Salt and pepper to taste
- 1 teaspoon red pepper flakes
- 2 tablespoons fresh lemon juice
- ¼ cup chopped fresh parsley
Instructions
- Cook linguine according to the instruction on the package.
- Meanwhile, melt butter in a large skillet over medium heat.
- Add the garlic and sauté for 1 minute, until fragrant.
- Add wine and simmer for about 3 minutes, until it’s reduced down by about 1/2.
- In an even layer, add the shrimp. Sprinkle with salt, pepper and red pepper flakes and cook until shrimp turns pink, about 2 minutes per side.
- Mix in the lemon juice, then add the pasta to the skillet and toss together with the shrimp and sauce. Top with parsley and serve.
