  1. Preheat the oven to 450°, and line 2 baking sheets with parchment paper.
  2. Peel the purple potatoes, and cut them into quarter inch sticks, adding them to the baking sheets as you go.
  3. Spray with olive oil, and sprinkle with salt (or seasoning/ or sugar and salt). Then add to the oven.
  4. Bake for 15 minutes, flip the sweet potato fries and bake for an additional 10 minutes until crispy on the outside, and tender on the inside.
  5. Serve hot.

Air Fryer Directions:

  1. Preheat the air fryer to 380°.
  2. Peel the purple potatoes, and cut them into quarter inch sticks, adding them to a large bowl as you work.
  3. Spray with olive oil, and sprinkle with salt (or seasoning/ or sugar and salt).
  4. Add to the air fryer basket (in batches as needed) without overcrowding.
  5. Air fry for 6 minutes, flip and air fry for an additional 6-8 minutes until crispy on the outside and tender on the inside.
  6. Serve hot.
