This Low Calorie Ham Breakfast Skillet is the perfect breakfast or brunch after the holidays. But it’s also great with deli ham and store-bought diced ham, making it good year around.
I like to make this for dinner too, it’s hearty and filling and my kiddo loves to dip a slice of toast in the runny eggs. So make it anytime of the year and anytime of the day, it’s a quick and easy meal I know you will love!


I originally made this recipe to use up leftover Christmas Ham, but I’ve also made it with Canadian bacon and even bacon. You can really get creative and add your favorite breakfast meats in this recipe. Even try it with my Healthy Homemade Sausage!

You can use any type of cooked breakfast meat to make this recipe. And if it’s not cooked first, simply add it to the pan and cook it up, then remove and continue with the recipe. Here are more breakfast meats to try in this recipe.

- 1 onion
- 2 potatoes
- 1 cup cooked ham
- 1 teaspoon Ranch Seasoning (or 1/2 teaspoon salt and pepper)
- 2 eggs
- 1 green onion
How to Make a Healthy Ham Breakfast Skillet
I like to cook the potatoes in the microwave to soften them up. This means the meal is done quicker.
But if you prefer not to use the microwave, dice the potatoes smaller and cook them for 5 minutes before adding in the onions. Then cook as directed and they will come out perfect.


How to Make Healthy Breakfast Recipes for Leftover Ham:
- Preheat a skillet over medium heat, spray with olive oil.
- Add the onions and cook for 5 minutes.
- Meanwhile, add the diced potatoes to a microwave safe bowl, and microwave for 2 minutes. Then add the cooked potatoes to the onions (this will soften them faster, while still giving your the crunchy bits you’ll want).
- Add the Ranch Seasoning (or just season with salt and pepper), the leftover ham, and toss together.
- Cook until the onions have softened and the potatoes have become golden brown with some crispy edges (about 5 minutes).
- Make 2 wells to crack the eggs into, then carefully crack the eggs into the wells (I find that cracking them individually into a small bowl then sliding them into the wells ensures no shells get into the hash).
- Cover and cook for 4-5 minutes until the eggs are set and the yolks are runny, cook for an addition 2-3 minutes for set yolks.
- Sprinkle with green onions, and serve hot.

One serving is about 1 egg and 1 cup of the veggie hash.
Special Tip: Ham can be very salty, so if you’re looking to lower the sodium you can soak the ham in cold water for 1 hour then drain and cook. You can also omit the salt from the recipe or the Homemade Ranch Seasoning as well.
