Healthy Hash Browns Meal Prep and Storage

Meal Prep: If you want an easy prep-able version of this, I recommend getting the frozen shredded potatoes at the grocery store. These are flash frozen so you won’t have to worry about the potatoes oxidizing. Otherwise you can cook completely and cool, then add to storage containers with other breakfast items (I recommend my Low Calorie Sausage, and Double Protein Eggs).
Storage: Leftovers can be frozen for up to a month in the freezer or 5 days in the fridge.
Reheating: Add to a baking sheet and pop in the oven at 350 degrees for 10-20 minutes until hot. You can also microwave for 2 minutes.

Ingredients
 
 

  • 2 russet potatoes peeled
  • Olive oil spray
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon cayenne pepper or to taste
  • ½ teaspoon paprika

Instructions
 

  • Shred potatoes with a cheese grater and move into a large bowl filled with cold water.
  • Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to remove excess starch.
  • Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.
  • Heat a large non-stick pan over medium heat and spray with olive oil. Add the shredded potatoes into the pan and season with salt, black pepper, cayenne pepper, and paprika.
  • Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Flip and continue to cook and stir until potatoes are browned all over, for about 5 more minutes.

  2. The recipe calls for 1 russet potato and doesn’t give a weight, potatoes come in many different sizes. So to be within your nutritional values what is the weight of the potato that you use?
