White wine for chicken piccata can be used, and it should be a dry white wine. Such as Pinot Grigio or Sauvignon Blanc.

If you choose to make this chicken with capers recipe with white wine, simply substitute wine for 1/2 of the chicken broth. Making the liquid 50/50 wine and chicken broth.

  • Use olive oil spray in place of olive oil. This way you’re using a fine mist instead of a tablespoon or two.
  • I also cut the butter from 6 tablespoons down to 1 tablespoon. This helped save 100’s of calories, but still kept the buttery flavor that makes this recipe so great.

If you want to make this chicken piccata with white wine, simply replace 1/2 of the chicken stock with wine and cook according to the directions below.

How to Make Healthy Chicken Piccata Recipes:

  1. Preheat a large skillet over medium-high heat. Slice the chicken breasts in half, butterfly style, so that you have thin cutlets.
  2. Season chicken with salt and pepper. Add the flour to a shallow bowl and dredge chicken in flour shaking off any excess.
  3. Spray the hot skillet with olive oil and add in the chicken. Working in batches, cook for 3 minutes each side until browned, transferring to plate as you work.
  4. Add the lemon juice, stock and capers to the skillet, and bring to boil, scraping up brown bits from the pan.
  5. Return all the chicken to the pan and simmer for 5 minutes until cooked through.
  6. Remove chicken to platter. Add the butter to sauce and whisk vigorously. Pour sauce over chicken and sprinkle with parsley.
