- Cut the chicken breasts in half into cutlets, so that you have two thin slices for each breast.
- To a shallow bowl or pie pan, combine the flour, salt and pepper.
- Heat a large skillet over medium-high heat, and spray with olive oil.
- Dredge both sides of the chicken cutlets in the seasoned flour, shaking off the excess.
- Add the cutlets into the pan and fry for 4-5 minutes on each side until golden brown. Remove the chicken to a large platter.
- Lower the heat to medium and add the mushrooms and sauté until they are browned, about 5 minutes.
- Pour the Marsala wine in the pan and boil for a few seconds to cook out the alcohol.
- Add the chicken stock and simmer for a minute to reduce the sauce slightly.
- Stir in the butter and return the chicken to the pan. Cook for 2-3 additional minutes to heat the chicken through.
- To each plate add one chicken cutlet, spoon over mushrooms and sauce. This easy chicken marsala sauce goes great with mashed potatoes or pasta.
