These chicken breasts are under 350 calories each, serve this baked pesto chicken recipe with a crisp salad or some roasted broccoli or asparagus.

Ingredients
 
 

  • 1 cup fresh basil leaves
  • ½ tablespoon olive oil
  • 2 tablespoons pine nuts
  • 1 garlic clove
  • 2 chicken breasts boneless skinless

Instructions
 

  • Add the basil, olive oil, pine nuts and garlic to a food processor and blend until smooth.
  • Place the chicken into a bowl or freezer bag and add 1/2 of the pesto. Mix until the chicken is coated in pesto, set aside until you're ready to cook..
  • Preheat the oven to 350° and line a baking sheet with foil.
  • Add the chicken to the baking prepared sheet and bake for 45-50 minutes until cooked through.
  • Remove the chicken from the oven, spoon over the remaining pesto, and serve hot.
