How to Make Pesto Chicken

  1. Add the basil, olive oil, pine nuts and garlic to a food processor and blend until smooth.
  2. Place the chicken into a bowl or freezer bag and add 1/2 of the pesto. Mix until the chicken is coated in pesto, set aside until you’re ready to cook..
  3. Preheat the oven to 350° and line a baking sheet with foil.
  4. Add the chicken to the baking prepared sheet and bake for 45-50 minutes until cooked through.
  5. Remove the chicken from the oven, spoon over the remaining pesto, and serve hot.

If you want to make pesto mozzarella chicken, simply add 2 tablespoons of mozzarella to the top of each chicken breast, and broil for 3 to 5 minutes. Then top with remaining pesto, and serve.
