How to Make Healthy White Chicken Chili
This healthy chicken chili recipe can be made in the crockpot and the instant pot.
This recipe is from my cookbook Easy Dinners. And this recipe is absolutely classified as “Easy Dinners” it takes only 5 minutes to prep, and then you just dump everything into the slow cooker and walk away!
Crock Pot Directions for Healthy White Chicken Chili:
- In a slow cooker, combine the onion, jalapeño, garlic, green chiles, cumin, coriander, chili powder, lime juice, broth, and chicken. Cover and cook on high for 3 hours or on low for 5 hours.
- When the chicken is almost done, put the beans in a medium bowl and use a fork to gently mash a little more than half of them. Set aside.
- Remove the chicken breasts and shred them. Return the chicken to the slow cooker, add the beans (mashed and unmashed) and cook, uncovered, for
- 10 minutes to heat everything through.
- Top with the cilantro and serve with toppings of your choosing.
Instant Pot Directions for Healthy White Chicken Chili:
- Sauté the onion, jalapeño, garlic, green chiles, and chicken on medium in the Instant Pot, add the broth, and scrape very well so you don’t get a “burn” message.
- Add the remaining ingredients (except the cilantro). Cover the Instant Pot and cook on high pressure for 20 minutes.
- Quick-release the pressure, remove the chicken and shred it, then return it to the pot and add the beans. Sauté on low for 5 minutes.
- Top with the cilantro and serve with toppings of your choosing.

Nutrition and Calories in White Chicken Chili
Please note, the nutrition is very different than the nutrition stated in the cookbook. This is because the database I use to collect the nutrition information is constantly being updated.
At the time that I wrote the cookbook, I believe that the beans registered as “dried and uncooked” without my knowledge. Which is much higher in calories. This is because when the beans cook, they plump up significantly. Now that the database has the option to choose canned beans, the nutrition has changed significantly.
With all of that said, I recommend having 2-3 servings (one serving is a cup) of this chili, or pairing it with a side dish.
