Meal Prep: You can easily meal prep these! Simply wrap individual portions in parchment paper, and stack in a gallon freezer bag or container.
Storage: Will hold in the fridge for 5 days and in the freezer for a month.
Reheating: You can add the wrapped servings to the microwave for 1-2 minutes. Or pop in a toaster/toaster oven for a couple minutes.

Ingredients
 
 

  • 1 slice of whole wheat sourdough bread or Gluten-free, or vegan bread
  • ¼ avocado sliced or smashed with a fork
  • Salt and pepper

Optional Toppings:

  • Egg fried or scrambled
  • Cheddar
  • Tomatoes
  • Cream Cheese
  • Radishes sliced
  • Cucumber sliced
  • Mixed Greens
  • Salda
  • Jalapeños
  • Hot sauce
  • Parsley

Instructions
 

Avocado Toast with Egg

  • Toast a slice of bread.
  • Top with 1/4 avocado, smashed or sliced.
  • Place a fried, or scrambled over the avocado.
  • Top with chopped parsley and serve.

Avocado Toast with Cheddar and Tomatoes

  • Toast a slice of bread.
  • Top with 1/4 avocado, smashed or sliced.
  • Add two slices of tomato, and 2 tablespoons cheddar cheese.
  • Broil for 1-3 minutes until the cheese is melted.
  • Top with favorite hot sauce and serve.

Cream Cheese Avocado Toast

  • Toast a slice of bread.
  • Smear over 1 tablespoon cream cheese.
  • Top with 1/4 avocado, sliced.
  • Sprinkle over some salt and fresh ground pepper and serve.

Vegan Avocado Toast

  • Toast a slice of vegan bread.
  • Top with 1/4 avocado, smashed or sliced.
  • Add sliced radishes, cucumbers and a little mixed greens, and serve.

Spicy Avocado Toast

  • Toast a slice of bread.
  • Top with 1/4 avocado, smashed or sliced.
  • Top with salsa, pickled jalapeños, and your favorite hot sauce. Then serve.
