These Low Calorie Breadsticks are an Olive Garden “copycat” recipe, and just 59 calorie each!

These homemade breadsticks are easy and fun to make, and are wonderful with soups, salads, and pasta dishes! I know you’ll love them!

Ingredients in Healthy Breadsticks

I like to make these homemade breadsticks with the butter and cheese topping. It does add 25 calories to each breadstick however, so I made the topping optional.

Either way you choose to make the breadsticks, they are still much healthier than Olive Garden’s breadsticks. So choose to add the topping or skip it, they will be yummy either way.

  • Olive oil spray
  • Rapid rise yeast
  • All purpose flour
  • Salt

Optional “Olive Garden” Butter Topping:

  • Butter
  • Parmesan cheese
  • Salt
  • Garlic powder

How to Make Healthy Breadsticks

These low calorie breadsticks are quick and easy to prep and bake. But they do require some “rising time”. You can minimize that time by placing the dough in the warmest spot in your home.

How to Make Healthy Breadsticks:

  1. In a standing mixer (or a large bowl), whisk together the water, and yeast. Let it sit for 5-10 minutes until it becomes foamy.
  2. Add the salt, and 1/2 cup of flour at a time mixing with the kneading hook, making sure it is incorporated before adding more flour. (If using a bowl and spatula, work 1/2 cup of flour in at a time until you have a sticky dough.)
  3. If using a standing mixer, kneed the dough for 2-3 minutes on medium speed until you have a smooth dough. If you don’t have a standing mixer, add some flour to a clean countertop and kneed the dough by hand for 3-5 minutes until you have an elastic like dough.
  4. Leave (or add back) the dough in the mixer bowl, and cover with plastic wrap and then a kitchen towel. Leave to rise for 1 hour
  5. (Special Tip: Leave the dough to rise in a warm and draft free spot of your home).
  6. Spray a baking sheet with olive oil spray and preheat the oven to 400 degrees.
  7. Uncover the dough, punch down and give a quick 1 minute kneed, then move to a clean floured surface. Cut into 12 portions.
  8. Roll each portion into breadstick “logs” and add to the prepared baking sheet as you work. Cover with a damp kitchen towel to rise for one hour (again, ideally in a warm place).
  9. Bake at 400 degrees for 15-20 minutes or until the rolls are golden brown.
  10. Remove from the oven and leave on the baking tray for 10 minutes to finish cooking, then move to a wired rack to cool.
  11. Brush each with melted butter and sprinkle over the cheese, salt and garlic powder.
  12. Serve warm.

This copycat breadstick recipe tastes just like Olive Garden's famous breadsticks, but for a fraction of the calories!
I like to add the butter and cheese to the top, but I kept this step as "optional" just incase you want to keep the calories as low as possible. If you choose to add the butter and cheese to the top, it will only add 25 calories to each breadstick!
Special Tip: Make sure your yeast is fresh, otherwise the dough won't rise.
