- 1 medium yellow or red onion
- 1 jalapeño
- ¼ cup canned diced mild green chiles
- 1 tablespoon ground cumin
- 1½ teaspoons ground coriander
- 1½ teaspoons chili powder
- Juice of 1 lime
- 4 cups 1 quart low-sodium chicken broth
- 2 (4-ounce) boneless, skinless chicken breasts
- 1 15.5-ounce can white beans
- ⅓ cup chopped fresh cilantro

Equipment
- Slow Cooker or Instant Pot
Ingredients
- 1 medium yellow or red onion minced
- 1 jalapeño seeds and ribs removed, minced 2 garlic cloves, minced
- ¼ cup canned diced mild green chiles
- 1 tablespoon ground cumin
- 1½ teaspoons ground coriander
- 1½ teaspoons chili powder
- Juice of 1 lime
- 4 cups 1 quart low-sodium chicken broth
- 2 (4-ounce) boneless, skinless chicken breasts
- 1 15.5-ounce can white beans, drained and rinsed
- ⅓ cup chopped fresh cilantro
Optional Toppings:
- Shredded cheddar cheese
- 0% Greek yogurt in place of sour cream
- Sliced green onions
- Tortilla chips
- Diced avocado
Instructions
Slow Cooker White Chicken Chili
- In a slow cooker, combine the onion, jalapeño, garlic, green chiles, cumin, coriander, chili powder, lime juice, broth, and chicken. Cover and cook on high for 3 hours or on low for 5 hours.
- When the chicken is almost done, put the beans in a medium bowl and use a fork to gently mash a little more than half of them. Set aside.
- Remove the chicken breasts and shred them. Return the chicken to the slow cooker, add the beans (mashed and unmashed) and cook, uncovered, for
- 10 minutes to heat everything through.
- Top with the cilantro and serve with toppings of your choosing.
Instant Pot White Chicken Chili
- Sauté the onion, jalapeño, garlic, green chiles, and chicken on medium in the Instant Pot, add the broth, and scrape very well so you don’t get a “burn” message.
- Add the remaining ingredients (except the cilantro). Cover the Instant Pot and cook on high pressure for 20 minutes.
- Quick-release the pressure, remove the chicken and shred it, then return it to the pot and add the beans. Sauté on low for 5 minutes.
- Top with the cilantro and serve with toppings of your choosing.
