The healthy scalloped potatoes recipe for only 141 calories! It’s great for holiday gatherings, or for a Sunday dinner side dish.


I made these easy scalloped potatoes low in calories with the help of olive oil spray (in place of butter) sharp cheese (you need less cheese when it’s sharp!) and unsweetened almond milk.
But don’t worry, it’s a versatile recipe. And if you prefer to use whatever milk or cheese you have on hand, you can still make this healthy au gratin potatoes recipe.

To cut lots of calories, I make these healthy scalloped potatoes with sharp cheddar. The sharper the cheese, the more cheese flavor. So we can cut the amount of cheese and thus the calories, without changing the flavor.
And I opt for metabolism boosting almond milk, though whatever unsweetened milk will work in this recipe.

- All-Purpose Flour (or Gluten-Free Flour)
- Unsweetened Almond milk
- Potatoes
- Low-fat sharp cheddar cheese
- Salt

How to Make Healthy Scalloped Potatoes
You can make this recipe ahead of time, just bake as directed, and cover with foil before placing in the fridge.
Then add to a warm oven (200-250 degrees) for 30-45 minutes until warmed through. I do this with all my side dishes and pop them in the oven when the main course (turkey, ham, brisket, etc) rests after cooking.


How to Make Skinny Scalloped Potatoes:
- Pre-heat the oven to 375 degrees.
- Lightly coat a 9×13 baking dish with olive oil spray.
- Heat a skillet over medium heat, spray with olive oil and add in the onion. Cook, stirring occasionally for 5 minutes.
- Stir in flour, then slowly add in milk. Finally, add in the potatoes. Mix and bring to a boil.
- Stir in 1/2 cup cheese, salt and black pepper.
- Pour mixture into prepared baking dish. Cover with foil and place in the oven.
- Bake for 20 minutes, remove the foil and bake for 1 hour more.
- Remove from the oven and sprinkle with remaining 1/4 cup cheese. Place back in the oven and broil for 2-5 minutes (watch closely) then remove from the oven.
- Cool 5 minutes before serving.
This recipe for cheesy potatoes makes a great meal prep side dish as well. It goes great with holiday ham, roasted turkey and even a chicken breast on a weeknight. It’s not just for holidays.
