Healthy Pork Loin Roast Meal Prep and Leftover Storage
Uncooked Meal PrepΒ β Rub the herb paste all over the uncooked pork loin, place in a gallon freezer bag and close. Freeze for up to a month. Defrost completely before cooking.
Cooked Meal Prep β Cook the pork loin according to the directions, cool completely. For single servings, slice the pork loin and add to individual containers with desired side dishes. Or place the the pork loin in a large container.Β
Frozen LeftoversΒ β Will hold in the freezer for 1 month.
Refrigerated LeftoversΒ β Will hold in the refrigerator for 4 days.
ReheatingΒ βΒ Add to the microwave for 2-3 minutes or add to a baking sheet covered with parchment paper and bake for 10-15 minutes in a hot oven (350-400 degrees). Cut in half to check that it is warmed through before serving.

- 1 pound pork tenderloin
- 1 tablespoon dijon mustard
- 2 garlic cloves minced
- 1 teaspoon fresh rosemary minced
- 1 teaspoon fresh sage minced
- 1 teaspoon fresh thyme leaves
- 1 teaspoon salt
- ΒΌ teaspoon pepper
- Olive oil spray
InstructionsΒ
- Preheat the oven to 350 degrees, and add a roasting rack to a roasting pan.
- In a small bowl, mix together the dijon mustard, garlic, rosemary, sage, thyme, salt and pepper.
- Rub the herb paste all over the pork loin, and spray the top with olive oil.
- Roast uncovered for 20 minutes until internal temperature of the pork roast reaches 160 degrees F.
- Remove from the oven and rest for 15 minutes before carving and serving.
- Cooking Note: For each 1 pound of pork loin, you will need to bake for 20 minutes in a 350 degree oven.
