  • Olive Oil Spray
  • 4 cloves garlic
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 lemon (zest and juice)

And at just 89 calories, this oven roasted broccolini is a super healthy vegan side dish you can feel good about serving weekly.
If you can't find broccolini (or baby broccoli) you can use regular broccoli florets instead.

Ingredients
 
 

  • 2 bunches Broccolini about 1 pound total
  • Olive Oil Spray
  • 4 cloves garlic thinly sliced
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 lemon (zest and juice)

Instructions
 

  • Wash the broccolini in cold water and trim about 1/2-inch off the bottom of the stems.
  • Preheat the oven to 375 degrees.
  • Add the Broccolini to a 9×13 casserole dish.
  • Top with lemon zest, garlic, salt, and pepper.
  • Place in the oven and cook for 15 minutes.
  • Remove from the oven, toss and squeeze 1/2 the lemon over the broccolini.
  • Add back to the oven and cook for an additional 10 minutes.
  • Serve hot with lemon wedges.
