These crispy Hasselback potatoes recipe are a cross between french fries, and baked potatoes. The sliced baked potato crisps up around the edges, but keeps it soft center. Just like French fries.

You can make Hasselback baked potatoes with all potato varietals. I like to use gold, or russet potatoes in this recipe. I find that they hold up best, and also mimic the flavor of delicious French fries.
The best Hasselback potatoes recipe I’ve made, has been with russet potatoes. Best of all, russet potatoes are in expensive, and easy to find.

How to Make Low Calorie Hasselback Baked Potatoes
It’s much easier than it looks to make hasselback potatoes with the help of a wooden spoon.
The easiest way to cut potatoes Hasselback style, is with the help of a simple wooden spoon. Simply place the cleaned potato in the spoon, so that it cradles the bottom of the potato. This way you can slice the potatoes, without cutting all the way through. The wooden spoon will stop the knife.
How to Make Skinny Hasselback Potatoes:
- Preheat the oven to 425°, and line a sheet pan with foil, or parchment paper.
- Slice the potatoes Hasselbeck style. The easiest way to do this is place a potato on a wooden spoon so that the spoon cradles the bottom of the potato. You can then slice down to the edge of the spoon without cutting all the way through.
- Place the potatoes on the baking sheet, lightly spray with olive oil, top with chopped rosemary, Parmesan cheese, salt, and pepper.
- Bake for 35-45 minutes, until the potatoes are tender on the inside, with crispy edges.
You can change up the ingredients for this Hasselback potatoes bake, it’s easily made vegan, by omitting the Parmesan cheese. You can add a little more salt, or use your favorite hard vegan cheese in place of Parmesan.
