I like to use mini gold potatoes to make this recipe. But you can use baby medley potatoes to enjoy several different colors. And fingerling potatoes also work for this recipe!

How to Make Healthy Smashed Potatoes
Smashing the potatoes is fun and easy. But just like with pancakes, the first one is often a mess. So start out slowly smashing the potatoes. You want them flattened and opened up, but still intact.
And if they fall apart, sprinkle a little cheese over the top, it will act like glue and hold your potatoes together.
How to Make Healthy Crispy Smashed Potatoes:
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Use a fork to pierce the potatoes 2-3 times each potato.
- Bring a large pot of water to a boil over medium high heat, and add in 3 of the garlic cloves, and the potatoes.
- Boil the potatoes until fork tender (about 10 minutes), then drain and set aside to cool (and discard the garlic).
- Mince the remaining 3 garlic cloves and chop the thyme leaves.
- Carefully (with oven mitts on) place the potatoes on the prepared baking sheet.
- Use a tall water glass to squish the potatoes until they are smashed, but still intact. Do this by placing the bottom of the glass on top of each potato and gently apply pressure until they smash like in the photos above.
- Sprinkle the tops of the potatoes with minced garlic, thyme, salt and pepper. Then lightly spray each with olive oil.
- Bake in the oven for 10 minutes, until they crisp up.
- Use a spatula to plate the potatoes and serve hot.
