What makes this recipe for potato latkes easy, is the simplicity of the recipe.
All you need to do is drain (the potatoes), mix (the batter), and lightly fry the crispy potato pancakes!


How to Make Potato Pancakes Healthy:
- Preheat a skillet over medium high heat. And line a plate with paper towels.
- Spray the hot pan with olive oil.
- Use a box grater to grate potatoes into a large bowl.
- Move the potatoes onto a piece of cheese cloth, or into a clean kitchen towel and squeeze as much of the moisture out as you can.
- Add the drained potatoes, egg, shallot, flour, salt and pepper to the bowl and stir to combine.
- Use a 1/4 cup measuring cup to scoop the potato mixture. Roll in wet hands into balls.
- Drop each ball individually into the hot pan, and use a spatula to press down into 1/4 inch patties.
- Cook for 2-3 minutes until browned on one side, flip and brown on the other side.
- Move each potato latke to the paper towel lined plate as they are done cooking. Spray the pan lightly between cooking potato fritters as needed.
- Serve hot with apple sauce, or one of the toppings above.
