- 2 pounds red potatoes
- Olive oil spray
- Your house of seasoning (choose one below)
Garlic Rosemary Seasoning:
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 sprig rosemary (optional)
4 More Low Calorie Seasonings:
- 2 teaspoons Homemade Ranch Seasoning (or store-bought)
- 2 teaspoons Homemade Taco Seasoning (or store-bought)
- 2 teaspoons Homemade Seasoning Salt (or store-bought)

How to Make Low Calorie Roasted Potatoes Red
What makes these red potatoes for roasting so easy and great, is the parchment paper. It makes cleanup a breeze, and also helps me cut calories from the recipe.
If you don’t have or don’t want to use parchment paper, make sure to oil the baking sheet so the potatoes won’t stick.


How to Bake Red Potatoes:
- Preheat oven to 425°.
- Line a rimmed baking sheet with parchment paper. In a small bowl combine the garlic powder, paprika, salt and pepper (or the spice blend you choose).
- Wash the potatoes and cut into 1 inch cubes, adding to the prepared baking sheet as you work.
- Spray the potatoes with olive oil, sprinkle with seasoning mix, and drop the whole rosemary sprig in the center (it will lightly infuse the potatoes without overwhelming them).
- Bake for 30-35 minutes, flipping 1/2 way through, until browned and crispy on the outside and tender on the inside.
- Serve hot.

I love potatoes, I know they get a bad reputation because they are carbs. But I think in moderation they can be a healthy carb, and since this is not a Keto site, carbs are ok and actually necessary for brain function.
