- ¼ cup 0% Greek yogurt
- ¼ cup all natural zero calorie honey substitute (or honey)
- 1 teaspoon vanilla extract
- ⅓ cup dried cranberries roughly chopped
Instructions
How to Make the Cranberry Bars:
- Preheat oven to 350 degrees, and spray a 9×13 baking pan with olive oil.
- In a medium bowl, combine the flour, cinnamon, and baking soda. Set aside.
- In a large bowl, whisk together the butter with white and brown sugar.
- Add in the egg whites, applesauce, and vanilla and whisk until fluffy.
- Pour the contents of the medium bowl (the dry ingredients) into the large bowl (the wet ingredients) and mix until until just combined.
- Fold in the cranberries and the white chocolate chips, and pour the batter into the prepared baking pan, smoothing out to the edges.
- Bake for 15 minutes, then set aside to cool. (NOTE: You will want these cooled or the cream cheese frosting will melt!)
How to Make White Chocolate Cream Cheese Frosting:
- Melt the white chocolate chips in the microwave in 10 second increments, mixing in-between, until melted completely.
- Add the coconut oil to the melted white chocolate and mix together… This will stop it form hardening too fast.
- To a large bowl, combine the cream cheese, Greek Yogurt, honey substitute and vanilla.
- Add 1/2 of the cranberries and 1/2 of the melted white chocolate to the large bowl.
- Use a hand mixer or countertop mixer to whisk on medium speed for 2-4 minutes, until it’s smooth and fluffy.
How to Assemble the Cranberry Bliss Bars:
- Once the cranberry bars have cooled completely, smooth the frosting over the top.
- Sprinkle with cranberries and drizzle with remaining melted chocolate.
- Place in the fridge for 30-60 minutes to set.
- Cut into 15 squares (4 cuts vertically and 4 cuts horizontally) and then cut each square diagonally to make triangles.
