  • 2 large eggs
  • 3 scallions
  • ⅔ cup all-purpose flour (or almond flour or gluten free flour)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Olive oil spray

Ingredients
 
 

  • 4 zucchini
  • 2 large eggs
  • 3 scallions chopped
  • cup all-purpose flour almond flour or gluten free flour work too
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Olive oil spray

Healthy Dips and Dressings for Zucchini Fritters:

Instructions
 

  • Preheat oven to 425° and line 2 baking sheets with parchment paper.
  • Use a box grater to grate zucchini into a large bowl.
  • Move the zucchini onto a piece of cheese cloth, or into a clean kitchen towel and squeeze as much of the moisture out as you can.
  • Add the zucchini, egg, shallot, flour, salt and pepper to the bowl and stir to combine.
  • Use a 1/4 cup measuring cup to scoop the zucchini mixture. Roll in wet hands into balls.
  • Place on the prepared baking sheet and press down into patties.
  • Spray with olive oil and place in the hot oven
  • Bake for 10-12 minutes, flip, spray the tops with olive oil and bake for an additional 10-12 minutes.
  • Serve hot or cold with sour cream, Greek Yogurt or one of the healthy dips above.
