Ingredients

Chicken Pho:

  • 1 teaspoon coriander seeds
  • 1 clove
  • 1 inch of fresh ginger peeled and sliced into 4 rings
  • 2 green onions quartered
  • 1 whole garlic clove peeled
  • 1 bunch cilantro stems separated from leaves
  • 4 cups chicken broth
  • 2 cups water
  • 2 chicken breasts
  • 4 ounces rice noodles
  • 2 teaspoons fish sauce

Chicken Pho Toppings:

  • bean sprouts
  • basil leaves
  • cilantro
  • lime wedges
  • sliced peppers jalapeƱos or chili peppers
  • sliced green onions

Instructions

  • Heat a pot over medium heat, add in the coriander and clove and toast until fragrant (about 1 minute).
  • Add the ginger, green onions and garlic clove and cook until fragrant (about 1 minute).
  • Add in the cilantro stems, chicken broth, water and chicken breasts. Bring to a boil over high heat, then reduce heat to a simmer (about 10 minutes).
  • When the chicken is cooked through, remove it to a plate and shred.
  • Strain the broth with a find mesh strainer, and discard all the solids.
  • Return the broth to the pot with the shredded chicken, rice noodles, and fish sauce.
  • Cook for 8-10 minutes, until the noodles are cooked through. Then top with cilantro leaves.
  • Serve with optional toppings, season with salt and pepper as needed.
