- 1Ā clove

Meal Prep: This can be made as a meal prep meal, or doubled and the leftovers can be stored as meal prep! Simply add individual portions to meal prep containers and store for later.
Storage: Will hold for 5 days in the fridge and for 2 weeks in the freezer.
Reheating: Add to an oven at 200-250 degrees until warmed through. Or to the microwave for 2-3 minutes.

Low Calorie Chicken Pho
Equipment
IngredientsĀ Ā
Chicken Pho:
- 1 teaspoon coriander seeds
- 1 clove
- 1 inch of fresh ginger peeled and sliced into 4 rings
- 2 green onions quartered
- 1 whole garlic clove peeled
- 1 bunch cilantro stems separated from leaves
- 4 cups chicken broth
- 2 cups water
- 2 chicken breasts
- 4 ounces rice noodles
- 2 teaspoons fish sauce
Chicken Pho Toppings:
- bean sprouts
- basil leaves
- cilantro
- lime wedges
- sliced peppers jalapeƱos or chili peppers
- sliced green onions
InstructionsĀ
- Heat a pot over medium heat, add in the coriander and clove and toast until fragrant (about 1 minute).
- Add the ginger, green onions and garlic clove and cook until fragrant (about 1 minute).
- Add in the cilantro stems, chicken broth, water and chicken breasts. Bring to a boil over high heat, then reduce heat to a simmer (about 10 minutes).
- When the chicken is cooked through, remove it to a plate and shred.
- Strain the broth with a find mesh strainer, and discard all the solids.
- Return the broth to the pot with the shredded chicken, rice noodles, and fish sauce.
- Cook for 8-10 minutes, until the noodles are cooked through. Then top with cilantro leaves.
- Serve with optional toppings, season with salt and pepper as needed.
