This easy oven roasted potatoes recipe is only 102 calories! They are vegan, and make a wonderful side dish as well. Roasted potatoes in the oven are crunchy on the outside, and tender on the inside. They’re wonderful as a side dish, for dinner, and go wonderful with eggs for breakfast.

  • Olive oil spray

Meal Prep: You can cook completely, cover and store for later.
Storage: Cover well and store in the fridge for 5 days or the freezer for a month.
Reheating: You can reheat (if necessary for this potato recipe) in a oven at 200-250 degrees until warmed through.

This easy oven roasted potatoes recipe makes perfect roasted potatoes!
You can skip the parchment paper if you don't have it, thought it will help the roasted potatoes crisp up without sticking.
If you choose to skip the parchment paper, spray the lined baking sheet with olive oil, and toss the potatoes halfway through baking.

Garlic Rosemary Seasoning:

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • teaspoon pepper
  • 1 sprig rosemary optional

Instructions
 

  • Preheat oven to 425°.
  • Line a rimmed baking sheet with parchment paper. In a small bowl combine the garlic powder, paprika, salt and pepper.
  • Wash the potatoes and cut into 1 inch cubes, adding to the prepared baking sheet as you work.
  • Spray the potatoes with olive oil, sprinkle with seasoning mix, and drop the whole rosemary sprig in the center (it will lightly infuse the potatoes without overwhelming them).
  • Bake for 30-35 minutes, flipping 1/2 way through, until browned and crispy on the outside and tender on the inside.
  • Serve hot.

  4. Bottoms were nice & crispy but tops looked like I’d just tossed them in the seasoning and place in oven. Were they to be flipped during the roast?
