How to Make Healthy Roasted Carrots
Roasting carrots has never been easier, thanks to this low calorie, no cleanup tip. Always use parchment paper!
By using parchment paper in this oven roasted carrots recipe, you won’t need so much oil to stop the carrots from sticking to the pan. This will lower the calories, and also help with cleanup. All you need to do is throw away the parchment paper after you’re done roasting carrots, and you can avoid the majority of the cleanup.
How to Make Skinny Roasted Carrots:
- Preheat the oven to 400° and line a baking sheet with parchment paper
- Cut the carrots in half to shorten them, then cut them into 1/2 inch thick sticks, dropping onto the prepared baking sheet as you work.
- Spray with olive oil, sprinkle with salt and pepper and drop the garlic (leave whole) into the center of the baking sheet.
- Roast for 20 minutes, until browned and tender.

- 1 teaspoon salt
- 1/2 teaspoon pepper
