  • 1 clove garlic

Ingredients
 
 

  • 8 carrots washed and peeled
  • Olive oil spray
  • 1 clove garlic
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons parsley chopped

Instructions
 

  • Preheat the oven to 400° and line a baking sheet with parchment paper
  • Cut the carrots in half to shorten them, then cut them into 1/2 inch thick sticks, dropping onto the prepared baking sheet as you work.
  • Spray with olive oil, sprinkle with salt and pepper and drop the garlic (leave whole) into the center of the baking sheet.
  • Roast for 20 minutes, until browned and tender.
  • Remove from the oven and discard the garlic clove, sprinkle with parsley and serve hot.
