- 1 tablespoon Homemade Ranch Seasoning (or store bought)

Healthy Roasted Zucchini Meal Prep and Storage
Meal Prep: This recipe can be made ahead of time and then cooled. Then place in an airtight freezer bag or container for later.
Storage: Will hold in the fridge for 6 days and the freezer for a month.
Reheating: Add to an oven at 350 degrees until warmed through.

Low Calorie Roasted Ranch Zucchini
Equipment
Ingredients
- 2 medium sized zucchini
- 1 tablespoon Homemade Ranch Seasoning or store bought
- Olive Oil Spray
Instructions
- Preheat oven to 450° and line a rimmed baking sheet with parchment paper.
- Cut the ends off the zucchini, then slice in half down the middle. Cut into 1/2 inch half-moons, and place in a large bowl.
- Sprinkle the cut zucchini with Ranch Seasoning, and toss together.
- Arrange the zucchini on the prepared baking sheet so they are not overlapping.
- Spray the tops of the zucchini with olive oil, and place in the oven.
- Bake for 5 minutes, then broil for 2-3 minutes (watch closely) until browned and crispy around the edges.
- Serve hot, or cool and add to salads in place of croutons.

I’m so glad you both loved the recipe!!
Finally got my husband to eat zucchini! I love this recipe so much, make it at least one a week. Put mine under the broiler to get a bit of that roasted taste. Going to try the air fryer next time, see if they crisp up a bit more. Your homemade ranch dressing mix is the best!

Mine tasted great, but didn’t crisp up. They are still pretty soft. Of course we still ate them… yummy!
