How to Make Low Calorie Mississippi Pot Roast

Most recipes for Mississippi pot roast call for browning the beef. And I’m not opposed to doing that. But I have made all three methods below (slow cooker, instant pot and oven) and honestly, I couldn’t taste a difference when I browned it or didn’t brown it.

Should you want to brown your beef first, by all means do so with a little olive oil or olive oil spray. But you can skip the step and save yourself lots of work and time.

How to Make Low Calorie Mississippi Pot Roast:

Slow Cooker Directions:

  1. Add beef to the slow cooker, top with ranch seasoning, gravy mix, peperoncini peppers and juice from jar.
  2. Cover and cook on LOW for 8-10 hours or HIGH for 6-7 hours. Do not open the lid while the roast cooks.
  3. Use forks to shred the beef, remove any fatty pieces, and serve hot.

Instant Pot Directions:

  1. Add beef to the Instant Pot, top with ranch seasoning, gravy mix, peperoncini peppers and juice from jar.
  2. Cover and seal, and cook on high pressure for 60 minutes.
  3. Allow natural release of pressure for 15 minutes, then do a manual release of pressure.
  4. Use forks to shred the beef, remove any fatty pieces, and serve hot.

Dutch Oven/Oven Directions:

  1. Preheat the oven to 300 degrees.
  2. Add beef to a dutch oven or a roasting pan with cover, top with ranch seasoning, gravy mix, peperoncini peppers and juice from jar.
  3. Bake for 3 hours, until the beef pulls apart easily.
  4. Use forks to shred the beef, remove any fatty pieces, and serve hot.
