These Low Calorie Marshmallows are just 11 calories and so much fun to make!
I have supplied you with two different ways to make these healthy marshmallows, with my favorite all-natural sweetener (so they are sugar free) or with regular white sugar (spoiler, they are still super low in calories!!)


To break it down, the sugar free marshmallows are just 11 calorie each. And the marshmallows made with sugar are just 35 calorie each. They are large marshmallows too!
Either way you choose to make them, this makes for a low calorie treat that is wonderful alone and in your favorite recipes.

Ingredients in Healthy Marshmallows
As I noted above, I have a favorite all-natural zero calorie sugar that I used in this recipe to get it both low calorie and sugar free. But you can use regular sugar and powdered sugar if you prefer. They will still be low calorie!

Shopping List for Healthy Marshmallows:
- Unflavored gelatin powder
- All-Natural Zero Calorie Sugar (see recipe card below) or regular sugar
- Vanilla extract
- All-Natural Zero Calorie Powdered Sugar (see recipe card below) or regular powdered sugar
How to Make Healthy Marshmallows
If you want smaller marshmallows, swap out the 8×8 baking dish and replace it with a 9×11 baking dish. Then cut them into 50 smaller marshmallows with 4 long cuts (the lengthwise of the rectangle) and 9 short cuts.
Tools and Equipment:
- 8×8 Baking dish
- Parchment Paper
- Countertop Mixer with Whisk
- Measuring cups and spoons


How to Make Healthy Marshmallows:
- Line a 8×8 baking dish with parchment paper.
- Pour 1 cup of water in the bowl of a stand mixer fitted with a whisk attachment, and sprinkle the gelatin over it. Let sit for 10 minutes.
- In a small saucepan, bring the remaining water and sugar to a boil over medium heat. Then boil for 3 minutes, and remove from the heat.
- Turn the mixer to the lowest setting and slowly pour the hot liquid mixture in. Add the vanilla and continue to whisk on low for a few minutes.
- Slowly increase your mixer speed incrementally, and whisk until large peaks from, about 10 minutes.
- Transfer the marshmallow mixture into the prepared baking dish, use a rubber spatula to smooth.
- Refrigerate for 2-4 hours, until set.
- Remove from the fridge and cut with kitchen scissors into 25 squares, 4 cuts each way.
- Add to a large bowl, sprinkle with powdered sugar, and toss to coat.
- To serve, use in your favorite hot chocolate, s’mores or holiday dishes, or alone as a yummy treat.

Low Calorie Marshmallows:
- 2 cups water divided
- ⅓ cup unflavored gelatin powder
- ⅔ cup All-Natural Zero Calorie Sugar or regular sugar
- 2 teaspoon vanilla extract
- ¼ cup All-Natural Zero Calorie Powdered Sugar or regular powdered sugar
Birthday Cake Marshmallows:
- ¼ teaspoon almond extract (add in at the last minute of whipping)
- ⅛ cup rainbow sprinkles (add in at the last minute of whipping)
Chocolate Marshmallows:
- ¼ cup cocoa powder (add in at the last minute of whipping)
Coffee Marshmallows:
- 1 cup strong brewed coffee (replace water in step #3 with coffee)
