Low Calorie Breakfast Tacos
IngredientsĀ Ā
- Olive oil spray
- 4 eggs
- Ā½ teaspoon Homemade Taco Seasoning (or store-bought)
- 1 can 15-ounce of pinto beans , drained and rinsed
- Ā¼ cup Homemade Salsa (or store-bought)
- 6 corn tortillas
Optional Toppings:
- Cheddar Cheese
- Sliced JalapeƱos
- Homemade Pice De Gallo
- Low Calorie Guacamole
- Greek Yogurt in place of sour cream
InstructionsĀ
- Preheat a skillet over medium low heat.
- Lightly spray with olive oil, then add the eggs and the taco seasoning.
- Cook for 3 minutes, then scrabble with a spatula and cook until the eggs are cooked through. Remove from the heat.
- Meanwhile, add the pinto beans and salsa to a medium bowl. Use a fork to gently mash the beans, and mix the salsa in.
- Steam the tortillas according to the package (wrap in wet paper towels and microwave for 20 seconds) until soft and pliable.
- Spread the bean mixture over one side of each tortilla.
- Top with taco flavored eggs and desired toppings.
