Ingredients You’ll Need:
- 3 apples
- 3 celery stalks
- 3 cups baby spinach
- 2 green onions sliced
- 1 tablespoon fresh flat-leaf parsley
- ½ cup 0% Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- 1 tablespoons apple cider vinegar
- ¼ teaspoon salt
- ⅛ teaspoon pepper

Meal Prep: Add all the ingredients to individual meal prep containers, or family sized containers.

Ingredients
- 3 apples I like to get a combination of green and red
- 3 celery stalks sliced
- 3 cups baby spinach thinly sliced
- 2 green onions sliced
- 1 tablespoon fresh flat-leaf parsley chopped
- ½ cup 0% Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup or honey
- 1 tablespoons apple cider vinegar
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- Core and slice the apples into thin sticks, adding to a bowl as you work.
- Add in the celery, spinach, green onions and the parsley.
- In a medium bowl combine the yogurt, maple syrup, apple cider vinegar, salt and pepper. Mix well.
- Add the dressing to the bowl of apples and veggies and toss well to combine.
- Cover and store in the refrigerator until ready to serve.
