  • 2 medium russet or gold potatoes scrubbed
  • Olive Oil Spray
  • 1 teaspoon freshly chopped rosemary
  • 1 tablespoon parmesan cheese
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Preheat the oven to 425°, and line a sheet pan with foil, or parchment paper.
  • Slice the potatoes Hasselbeck style. The easiest way to do this is place a potato on a wooden spoon so that the spoon cradles the bottom of the potato. You can then slice down to the edge of the spoon without cutting all the way through.
  • Place the potatoes on the baking sheet, lightly spray with olive oil, top with chopped rosemary, Parmesan cheese, salt, and pepper.
  • Bake for 35-45 minutes, until the potatoes are tender on the inside, with crispy edges.
