- 2 large eggs
- 3 scallions
- ⅔ cup all-purpose flour (almond flour or gluten free flour work too)
- ½ teaspoon salt
- ¼ teaspoon pepper

Healthy Potato Latkes Meal Prep and Storage
Meal Prep – Cook the latkes as directed and drain, allow to cool completely then move to a container or freezer bag.
Frozen Storage – Will hold in the freezer for 1 month
Refrigerated Storage – Will hold in the refrigerator for 5 days.
Reheating – Add individual latkes to a dry pan and cook on medium-low until heated through. Or add multiple to a baking sheet and add to an oven at 300 degrees. Cook for 10-15 minutes until warmed through.

Ingredients
- 2 potatoes peeled
- 2 large eggs
- 3 scallions chopped
- ⅔ cup all-purpose flour almond flour or gluten free flour work too
- ½ teaspoon salt
- ¼ teaspoon pepper
- Olive oil spray
Healthy Toppings for Potato Latkes:
- Apple Sauce (try this Instant Pot Apple Sauce Recipe)
- Sour Cream (or cut calories and use Greek Yogurt)
- Cream Cheese and Smoked Salmon
Instructions
- Preheat a skillet over medium high heat. And line a plate with paper towels.
- Spray the hot pan with olive oil.
- Use a box grater to grate potatoes into a large bowl.
- Move the potatoes onto a piece of cheese cloth, or into a clean kitchen towel and squeeze as much of the moisture out as you can.
- Add the drained potatoes, egg, shallot, flour, salt and pepper to the bowl and stir to combine.
- Use a 1/4 cup measuring cup to scoop the potato mixture. Roll in wet hands into balls.
- Drop each ball individually into the hot pan, and use a spatula to press down into 1/4 inch patties.
- Cook for 2-3 minutes until browned on one side, flip and brown on the other side.
- Move each potato latke to the paper towel lined plate as they are done cooking. Spray the pan lightly between cooking potato fritters as needed.
- Serve hot with apple sauce, or one of the toppings above.
