  • 1 pound all-natural ground bison or buffalo or beef if you prefer
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup blue cheese
  • 4 whole wheat buns
  • 1 cup arugula

More Optional Toppings:

  • Spicy brown mustard
  • Sliced red onion
  • Tomato slices
  • Cooked bacon

Healthy Buffalo Blue Cheese Burger Meal Prep and Storage

Meal Prep: You can meal prep this healthy recipe easily. Simply assemble, wrap in parchment paper and add to a plastic bag or container.
Storage: Will hold for 2 days in the fridge (may get soggy, so 1 day is ideal), does not do well in the freezer.

These Protein Packed Burgers are based off a bison burger in the first Lose Weight By Eating cookbook.
We've modified it a bit, and of course you can use beef if you prefer. Plus we've supplied you with a topping list to jazz up your bison burger however you like.
Special Tip: We love bison (also known as buffalo) it tastes just like beef, but with less calories and more protein! But use beef if you prefer it… these blue cheese burgers are even good with ground turkey!

  • Grill OR Grill Pan



  • Heat a grill to high heat and spray the grill grates with olive oil. (Alternatively, heat a grill pan over high heat and spray it with olive oil.)
  • Make four patties from the meat. Push your thumb into the center and create a little dimple on both sides. This will help the burger cook more evenly and keep a flat patty shape. Gently sprinkle the patties with salt and pepper.
  • Grill the burgers for 7 to 10 minutes, flipping once. Transfer the burgers to a large plate, top with blue cheese and let them rest for 5 minutes.
  • To assemble the burgers, add some arugula to each bottom bun, top with a burger patty and optional toppings. Then add the top buns on the burgers and serve.
