  • 1 pound all-natural ground bison (or buffalo, or beef if you prefer)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup blue cheese
  • 4 whole wheat buns (or try these Low Calorie Buns)
  • 1 cup arugula

Healthy Buffalo Blue Cheese Burger Meal Prep and Storage

Meal Prep: To meal prep these burgers, mix the meat and form into patties. Then place squares of parchment paper between each patty and stack. Place the meal prepped bison burgers in a freezer bag or container and freeze for up to a month.
Storage: Store any leftovers in the fridge for up to 4 days. I like to separate the ingredients (burgers in one container, buns in another, etc) so nothing gets soggy.

Special Tip: If you've never had it before, bison (also known as buffalo) it tastes just like beef, but with less calories and more protein! But use beef if you prefer, these blue cheese burgers are even good with ground turkey!

  • Heat a grill to high heat and spray the grill grates with olive oil. (Alternatively, heat a grill pan over high heat and spray it with olive oil.)
  • Make four patties from the meat. Push your thumb into the center and create a little dimple on both sides. This will help the burger cook more evenly and keep a flat patty shape. Gently sprinkle the patties with salt and pepper.
  • Grill the burgers for 7 to 10 minutes, flipping once. Transfer the burgers to a large plate, top with blue cheese and let them rest for 5 minutes.
  • To assemble the burgers, add some arugula to each bottom bun, top with a burger patty and optional toppings. Then add the top buns on the burgers and serve.
