This Low Calorie Buffalo Blue Cheese Burger is just 463 calories and has 34g of protein!. I love buffalo meat (also known as bison) as it has more protein, less fat, and fewer calories than beef. But you could absolutely make this healthy burger with beef (or even turkey) if you prefer.
Ingredients You’ll Need:
- Olive Oil Spray
- 1 pound all-natural ground bison (or buffalo, or beef if you prefer)
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup blue cheese
- 4 whole wheat buns (or try these Low Calorie Buns)
- 1 cup arugula
- See recipe card below for toppings

Healthy Buffalo Blue Cheese Burger Meal Prep and Storage
Meal Prep: To meal prep these burgers, mix the meat and form into patties. Then place squares of parchment paper between each patty and stack. Place the meal prepped bison burgers in a freezer bag or container and freeze for up to a month.
Storage: Store any leftovers in the fridge for up to 4 days. I like to separate the ingredients (burgers in one container, buns in another, etc) so nothing gets soggy.

Equipment
- Grill OR Grill Pan
Ingredients
- Olive Oil Spray
- 1 pound all-natural ground bison or buffalo, or beef if you prefer
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup blue cheese
- 4 whole wheat buns (or try these Low Calorie Buns)
- 1 cup arugula
More Optional Toppings:
- Spicy brown mustard
- Sliced red onion
- Tomato slices
- Cooked bacon
- Frank's Red Hot Sauce (if you want these "Buffalo Wing" Style)
Instructions
- Heat a grill to high heat and spray the grill grates with olive oil. (Alternatively, heat a grill pan over high heat and spray it with olive oil.)
- Make four patties from the meat. Push your thumb into the center and create a little dimple on both sides. This will help the burger cook more evenly and keep a flat patty shape. Gently sprinkle the patties with salt and pepper.
- Grill the burgers for 7 to 10 minutes, flipping once. Transfer the burgers to a large plate, top with blue cheese and let them rest for 5 minutes.
- To assemble the burgers, add some arugula to each bottom bun, top with a burger patty and optional toppings. Then add the top buns on the burgers and serve.

Nutrition and Calories in Buffalo Burger Recipes
Lower the Sodium: Cut the salt from the recipe and replace it with lemon zest. The cheese is also high in sodium, think about changing out for a lower sodium cheese or omitting it all together.
Lower the Carbs: You can make these “Lettuce Wrap” style to cut the carbs (and calories) more.
