This Low Calorie Protein Cookies Recipe is just 71 calories, vegan, gluten-free, and so easy to make! You’ll love these chocolate chip protein cookies! They are a great healthy dessert or snack, and you can make them in just 15 minutes (including prep time!)

- ½ cup coconut flour
- 3 (69 grams) scoops vanilla protein powder
- ½ cup creamy almond butter (or peanut butter)
- ¾ cups unsweetened applesauce
- 1 teaspoon baking soda
- ⅓ cup semi sweet chocolate chips

Meal Prep: You can make the cookies ahead of time and bake completely then cover and store for later. You can also store the unbaked batter just cover well, and store for later to bake.
Storage: Will hold for 6 days in the fridge baked, or 2 days unbaked. Or one month in the freezer (baked or unbaked).

Ingredients
- ½ cup coconut flour
- 3 (69 grams) scoops vanilla protein powder
- ½ cup creamy almond butter or peanut butter
- ¾ cups unsweetened applesauce
- 1 teaspoon baking soda
- ⅓ cup semi sweet chocolate chips
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- In a medium bowl combine the coconut flour, protein powder, almond butter, applesauce and baking soda.
- Mix together until just combined, then fold in chocolate chips.
- Scoop 1 oz (2 tablespoon) balls of cookies form the batter and place on the prepared baking sheet, flattening gently with the palm of your hand.
- Bake for 10-13 minutes until lightly browned.
Special Tip: To stop the protein cookie batter from sticking to your hand (when you flatten the cookies) lightly wet your hands with cold water.
